Awesome Vegan Chili

I made this Crock Pot Vegan Chili for my daughters graduation party, and it was a big hit with vegans and meat eaters alike. Meat eaters also got my 3,2,1 Ribs. If no one told you. You would probably never no that this chili is vegan.

Ingredients:

1lb Impossible plant based meat.

1 Tablespoon olive oil.

3 Guajillo Dried Chile Peppers (New Mexico or California will work fine also).

5 Garlic cloves minced.

Dried red pepper flakes.

1 Large with onion chopped.

1 Bell pepper chopped. (I used 1/2 a red and 1/2 a green)

2 Stalks of celery.

28oz can crushed tomatoes.

1 can Rotel fire roasted diced tomatoes and green chilies.

2 – 15oz cans of black beans drained and rinsed.

15oz can kidney beans drained and rinsed.

15oz can chili beans (not drained and rinsed).

1 Cup water

4 Tablespoons chili powder.

2 Teaspoons ground cumin.

2 Tablespoons smoked paprika.

1 Tablespoon pure maple syrup.

1/2 teaspoon cayenne pepper.

Salt and pepper to taste.

Boil dried chili peppers for 10 minutes. Remove peppers and finely chop. Return to pan add 1/2 cup of the water. Purée and set aside.

Chop Onion and mince garlic. Heat oil in pan. Sauté 1/2 the onions and 1/2 garlic till onions are translucent. Add plant based meat. Brown meat then set aside.

Drain and rinse kidney and black beans, and add to Crock Pot. Add all the other ingredients to Crock Pot and stir. Set Crock Pot to low for 6 hours or high for 4 hours.
