Shredded Buffalo Chicken Sandwich with Apple Raisin Slaw

This recipe can be made in a crock pot or Instant Pot. I will first go over it with the Instant Pot. There are a few components to this sandwich. In this post we will concentrate on the meat part of the sandwich. There are links on this page to the other components. You can use a store bought Buffalo sauce. I preferer to make my own. Ingredients:

2Lb chicken breast

1 cup Buffalo sauce

1oz package dry ranch dressing mix

1/2 cup chicken broth

1/2 cup coleslaw per sandwich (recipe for Apple Raisin Slaw here)

1/4 cup chicken broth with 1-2 tsp cornstarch for thickening sauce at the end.

Whisk together Buffalo sauce, chicken broth, salt, and ranch seasoning packet in the inner pot. Add chicken to inner pot. Put lid on instant pot and turn steam valve to seal. Pressure cook on high for 15-18 minutes. Let pot do a natural release for 10 minutes. Then carefully quick release the rest of the pressure. For crock pot put in crock pot for 6 hours on high. Pull out chicken. Mix corn starch and broth. Turn instant pot to sauté. Wisk in corn starch mixture to thicken the sauce.

With two forks shred the chicken breast. Then put back in instant pot on warm, and stir to combine. Simmer on low for 15-20 minutes.

Next let’s build the sandwich. Toast sliced Kiser rolls. Put 3/4 cup chicken mixture on bottom roll. If you want cheese ( I used pepper jack ). Put on top of the meat. Then top with coleslaw. Any coleslaw you like is fine. I like the Apple Raisin Slaw because it offsets the heat of the sauce really nicely.
