These lettuce wraps are always a big hit. More than one person has demanded this recipe before leaving my house. One of those do it at your own pace recipes.
Ingredients:
1 Tablespoon olive oil
1lb Ground chicken
3 Cloves of garlic chopped
1 White onion chopped
1/3 cup Hoisin sauce
2 Tablespoons soy sauce
1 Tablespoon rice wine vinegar
1 Tablespoon fresh grated ginger
1 Tablespoon siracha sauce.
1 Can of water chestnuts diced
3 Green onions thinly sliced
Salt and pepper to taste
1 Head of butter lettuce (also known as Boston lettuce)
You don’t have to ground your own chicken. I’m just thrifty (I don’t want to pay $5 a pound because it’s ground). Grind it and put in the fridge. We got chopping to do.
Make this. Look like this. Plus some water chestnuts.
Chop onion, garlic, and water chestnuts. Grate ginger. Set them aside.
Brown ground chicken Chop into small pieces.
Heat oil in pan over medium heat. Cook chicken till there is just no pink. Making sure to chop it as finely as possible.
Stir in onions, garlic, ginger, hoisin sauce. Stir in vinegar, soy, and sriracha. Add chestnuts, 1/2 the green onion.
Stir in onions, garlic, ginger, hoisin sauce, rice wine vinegar, soy sauce, and sriracha. Cook for 2 minutes, or until onions become translucent. Add the chestnuts and 1/2 the green onion. Salt and pepper to taste. Sir in. Time wrap it up.
Add rice to the lettuce. Pile some chicken on. Enjoy!
Carefully pull off leaves from the butter lettuce head, and place on plate. If they are really thin you might want to double them up. Add a little rice. Then pile some of the chicken mixture on top. Sprinkle with remaining green onions. Enjoy!
Brain, I made this for dinner tonight and it was a hit at my house. Delicious! Fun time telling my youngest that we have know each other since I was 14yrs old. She will be 14 in a couple of weeks, I feel old.
