German Pancake aka Dutch Baby.

This is an easy breakfast. You will be done cleaning up before it’s even ready. I am serving it with my Blackberry Habanero Syrup and powdered sugar. I posted the syrup yesterday. It is also nice with lemon and sugar. I’m posting a 6 serving recipe. Pictures will show a half recipe since it’s just two of us, but it all works the same.

Ingredients:

Remember this is double what I am cooking in the pictures.

Half a stick of butter

6 Eggs lightly beaten

1 Cup flour

1 Cup milk

2 Pinches of salt

Preheat oven to 350F. In a bowl lightly beat 6 eggs. (remember I am doing a half recipe)

Add flour, salt, and milk. Whisk together. It will be a little lumpy. Don’t want to over whip the eggs.

Put butter in 10×6 casserole dish, and put into oven and melt butter. Pull dish out of oven. Lightly shake dish to even out the butter on the bottom. Pour batter in the middle of the butter. This should push the butter out to the edges. That’s a good thing. That is what makes it have the rising crust on the edges. Put in the oven for 40 minutes.

Take out of the oven. It may have some butter pooled on top. That’s ok. Slice and serve with syrup or lemon and powdered sugar. I had mine with my Blackberry Habanero Syrup featured on this page. Enjoy and be sure to leave a comment.
