This is a simple yet tasty baked salmon with a cilantro honey lime glaze. I served it with a cilantro lime rice, but it would also go great with the coconut rice already on this site.
Ingredients:
1lb Salmon
2 Tablespoons olive oil
Salt and pepper
2 Tablespoons chopped fresh cilantro
2 Tablespoons honey
1 1/2 Tablespoons lime juice
4 Cloves garlic minced
Cayenne pepper to taste
Pre heat oven to 400 degrees. Brush both sides of the salmon with olive oil. Place salmon on piece of foil and wrap edges to make a little pan around each piece of fish. Place on baking sheet.

In a small bowl mix honey, lime juice, garlic, and cilantro. Spread glaze on the salmon. Sprinkle with cayenne pepper to taste. Put salmon in preheated oven for 20 minutes.
Pull salmon out of the oven. Plate salmon and garnish with lime.
Take the salmon out of the oven. Unfold the edges of the foil so you can get a spatula under the fish. It should separate from the skin. Don’t worry if all the skin doesn’t come off. Plate salmon and garnish with lime wedges. Enjoy!!
