Simple and quick tasty steak. I wanted to make my own Pesto, but on this day there was no Basil to be found. That’s ok this Private Selection stuff from Smith’s is great. Pesto is simple and hard to mess up. Basil, oil, garlic. Maybe some parmesan, and I like some pine nuts in mine for a nice nutty flavor. But for now this will do just fine. The Honey, Garlic, and Brown Sugar Carrots pictured above are a great side dish for this, and will soon have their own post.
Ingredients:
1 1/2-2lb Skirt Steak
1/3 Cup Pesto ( I will be splitting this up as we go along. )
1/2 stick of softened butter
Salt and Pepper to taste
In a small bowl mix about half the pesto with all the butter.
Pre heat grill on high. Salt and pepper steak to taste. Grill steak 2 minutes on each side.
Grill 2 minutes on both sides. Spread Pesto Butter on each side.
Spread Pesto Butter on each side (saving about half or more for the end) as you flip and grill for another 2 minutes. Watch the flame. The butter and oil can cause flame ups, but you want some of that yummy char.
Remove steak and let rest for 3-5 minutes before slicing. This is very important. This time allows the meat to redistribute the juices. If you slice it to early all the juice will leak out as you slice, and your steak will be dry and flavorless.
Add the rest of the pesto to the remaining butter and mix it up. Slice the meat against the grain in to strips. Dress with the Pesto butter and enjoy.
